Everything about this cook book is relaxed, unhurried, calm.
A restaurant café bar with a difference is due to open in the Old Royal Naval College on the banks of the River Thames in Spring of 2010. The Old Brewery will have an experimental six-barrel brewery attached to it, where brewers (including 2008 Brewer of the Year Alastair Hook) will be able to trial, tinker and ultimately create quality, limited edition beers.
Run by one of the UK's most innovative and highly regarded brewers Meantime Brewing Company, the Old Royal Naval site has a robust brewing heritage dating back to Tudor times. In 1717 a brew house was built to supply the pensioners of the Royal Naval Hospital with a 3-pint daily ration of beer. The brewery itself is built upon the foundations of an early 19th century brew house, so before long the building will once again come alive to the sights, sounds and aromas of brewing.
The venue’s signature beer will be ‘Hospital Porter’, oak-aged and packed with rich malt, liquorice, chocolate and caramel flavours. The main hall restaurant and café will serve modern British food with the occasional nod to Britain’s rich naval history. Beer will be integral to much of the cookery and the menu will include dishes such as beer cured salmon, shucked oysters marinated in Hospital Porter served with watercress, and chocolate beer sorbet.
