5 minutes
Ingredients:

50ml Bombay Saphire Gin
12.5ml sugar syrup or caster sugar
1 x wine glass full of chopped up ripe water-melon

Instructions:

This summer classic, the watermelon martini, is usually made with plain vodka, but tastes fabulous with gin, or a good flavoured vodka.

Using gin gives you a lot more flavour, whilst using a flavoured vodka, like 42 Below Manuka Honey will make a much more interesting drink than a neutral product.

Add all the ingredients together in a cocktail shaker. Add as much cubed ice as you can, and then shake it all up as if your life depended on it. Strain into a martini glass.
