Ingredients: 

6 x rashers of lean Oak Smoked back bacon
1 x tbsp of oil
300g of cooked new potatoes (drained and thinly sliced)
1 x red onion (thinly sliced)
4 x eggs
1 x tbsp of fresh chives
6 x green olives (pitted and sliced)
6-8 fresh cherry tomatoes
100g x mozzarella cheese (roughly torn)

Instructions: 

Heat the oil in a non-stick frying pan and cook the bacon, new potatoes and onion for 2-3 minutes until they turn golden brown. Meanwhile beat the eggs together with the fresh chives.

Add the olives, cherry tomatoes and mozzarella cheese to the pan. Pour over the eggs and cook for 2-3 minutes until just set. Finish cooking the frittata under a preheated grill until the eggs and cheese have turned golden and crispy. Serve the frittatta sliced into thick wedges with extra grilled tomatoes and a green crisp salad.
