Ingredients

6 x rashers of lean Wiltshire Cure Smoked back bacon (roughly chopped)
100g x linguine pasta per person
1 x tbsp olive oil
1 x red onion (thinly sliced)
4 x sun-dried tomatoes (roughly chopped)
100g x ricotta cheese
50g x fresh Spinach
Fresh basil to garnish


Instructions

Cook the linguine in a pan of boiling water as per pack instructions. Meanwhile put the olive oil into a pan, add the red onion and bacon and cook lightly. Add the sun dried tomatoes and the ricotta cheese and lightly heat to blend the ingredients together. Add the spinach leaves and stir through. Serve straight away scattered with black pepper, torn basil, chunks of crusty bread and a tomato and basil salad.
