Ingredients

Keep the last of the winter cold out with this baked apple recipe from Fruisana. This warming pudding can be served hot with custard, or cold with cream or ice cream…depending on how cold you are.

50g dried cranberries
50g dried apricots, finely diced
300ml red wine
½ tsp ground cinnamon
75g Fruisana Fruit Sugar
4 Bramley apples


Instructions

1. Place the cranberries, apricots, red wine, ground cinnamon and Fruisana sugar into a medium sized saucepan.
2. Bring the ingredients to the boil and simmer for 5 minutes. Remove from the heat and leave to cool.
3. Core the apples and then carefully score around the circumference of apples, just cutting into the apple flesh.
4. Place the apples in an shallow ovenproof dish. Fill the core hollows with cranberries and apricots, pushing them down to the bottom of the hollows.
5. Pour the remaining fruit and liquid into the base of the dish.
6. Bake in the oven: electric 190ºC, fan 170ºC, gas mark 5 for 40–50 minutes until the apples are soft and cooked. Serve hot or cold.
