Easy lamb tagine

This recipe from delicious. magazine’s December issue is a great winter dish with plenty of warming spice.

Ingredients: 

400g lamb steaks, cubed
2 tsp olive oil
1 onion, sliced
2 garlic cloves, chopped
2 tsp ground coriander
2 tsp ground cumin
1 tsp ground ginger
Pinch of cinnamon
400g chopped tomatoes
200ml chicken stock
100g pitted prunes, chopped
1 tbsp ground almonds
Handful coriander, chopped

Instructions: 

Brown the lamb leg steaks using the olive oil in a pan, and then set aside. Add the onion and garlic to the pan and fry for 5 minutes. Add the coriander, cumin, ginger and cinnamon, and fry for 2 minutes. Add the lamb, chopped tomatoes and the chicken stock. Add the prunes and simmer for 40-45 minutes. Stir in the ground almonds and the fresh coriander. Serve with herby couscous.
