Raspberry creme brulee

Raspberry creme brulee with Bottlegreen's Raspberry & Lovage cordial

This recipe from Bottlegreen uses their Raspberry & Lovage cordial for a romantic twist. Serve this tempting dessert up on Valentine’s Day, or whenever you fancy spoiling your favourite person.

6 tbsp x Bottlegreen Raspberry & Lovage cordial
200g x tub low fat soft cheese
300g x natural low fat yogurt
200g x raspberries
4 x heaped tsp demerara sugar
8 x sponge fingers


Instructions

Put 4 tbsp of the cordial into a shallow bowl and add 4 tbsp cold water, stirring to mix. In a separate bowl, beat or whisk the soft cheese and yogurt together until smooth and creamy. Stir in the remaining cordial.

Choose 4 individual heatproof dishes that will fit under the grill (or use one large dish). Briefly dip the sponge fingers into the diluted cordial and place them in the base of the dishes, breaking them to fit. Share the raspberries between each dish, reserving a few for decoration. Spoon the soft cheese mixture over them, leveling the tops. Sprinkle the demerara sugar evenly over the surface.

Preheat the grill to a medium heat. Grill the desserts until the sugar melts, bubbles and browns. Cool for a few moments, then decorate with the reserved raspberries. Chill until ready to serve.
