Ultimate bacon brunch with pancakes and maple syrup

8-12 x rashers of lean Maple Cure back bacon
100g x plain flour
1 x egg
125ml x milk
1 tspn x oil
Maple syrup to serve
Instructions
To make the batter for the pancakes, place the plain flour in a bowl and make a well in centre of it. Break the egg into the well and beat it slowly, gradually incorporating the flour. Add the milk bit by bit, until all the ingredients have combined to make a smooth, thick batter.
Next, grill the rashers of bacon for 2-4 mins under a hot preheated grill. Set aside once cooked and keep warm.
To make the pancakes, heat the oil in a non stick pan, tipping out any residue oil once hot. Add 4 large spoonfuls of the batter to the pan, and allow the mixture to set and brown on one side before carefully turning the pancake over. Remove the pancake from the pan and set aside, keeping it warm. Repeat this method with the rest of the batter mix.
Serve the pancakes stacked on top of each other with the crispy bacon rashers sneaked in between them. Liberally pour over the maple syrup to finish, and tuck in. Oh yum.
