Blue Dragon Beef in oyster sauce

Why get a Chinese takeaway when you do it yourself in minutes?

Ingredients: 

350g/12oz lean beef steak
2 tsp Blue Dragon light soy sauce
2 tsp Blue Dragon Shaoxing wine or dry sherry
1 tsp cornflour
1 green pepper
1 ½ tbsp groundnut oil
70ml / 2 ½ floz chicken stock
1 ½ tbsp Blue Dragon oyster sauce
1 ½ tbsp spring onions, finely chopped (to garnish)

Instructions: 
  • Cut the beef into thin slices 5cm (2ins) long and put them into a bowl. Add the soy sauce, Shaoxing wine and cornflour. Let the mixture marinate for
  • Cut the pepper into 5cm (2in) strips.
  • Heat a wok or large frying-pan until it is very hot. Add 1 tbsp of the oil and when it is almost smoking, add the beef and stir fry for 3 minutes.  Remove the beef slices and drain them in a sieve or colander. 
  • Clean the wok, add the remaining oil and the pepper, and stir fry for 1-2 minutes. Remove them and drain with the beef.
  • Wipe the wok clean and re-heat it over a high heat. Add the chicken stock and Blue Dragon oyster sauce. Bring the liquid to the boil, add the cornflour mixture and simmer for two minutes.
  • Return the drained beef and peppers to the pan and coat all the slices thoroughly with the sauce. 
  • Turn the mixture onto a serving plate and garnish with spring onions. Serve at once.


Top tip:
Try replacing the green peppers with mange tout or another stir fry veg that you love.

Quirky fact: The cornflour marinade on the beef helps to create a soft mouth feel, a characteristic the Chinese love!
