Seared chicken skewers with mixed leaves

Ingredients: 

2 packs of mini chicken fillets
1 sachet Patak’s Easy Tikka Masala Paste
10 skewers, soaked (so they don't burn)
Bag mixed salad
1 lime, juiced
3 tbsp olive oil
Pinch sugar
Lime wedges to garnish

Instructions: 
  • In a bowl, marinate the mini chicken fillets in the sachet of Patak’s Easy Tikka Masala paste. Place in the refrigerator for at least one hour or overnight if possible.
  • When marinated, thread onto the pre-soaked skewers. Cook on the BBQ or on the hob until cooked through and tender. The cooking time will vary depending on what size the pieces of chicken are.
  • Meanwhile assemble the salad dressing. Mix the lime juice, olive oil and sugar together. Dress the salad and arrange it on the plates. Arrange the skewers over the salad and serve them with wedges of lime.
