500ml water
200g sugar
20 sprigs of fresh thyme
Juice of 2 lemons
4 tbsp of honey
4 tsp of Castillo de Canena Family Reserve Arbequina extra virgin olive oil
Mix all the ingredients together, except Family Reserve Arbequina, and bring to the boil. Simmer gently for 10-15 minutes. Strain the ingredients into a container and (after cooling) freeze in a suitable container.
At the time of serving, scrape and stir the sorbet with a fork and serve in well-cooled glasses accompanied with grated lemon rind, a teaspoon of Family Reserve Arbequina and some thyme sprigs for decoration.
