Castle MacLellan in Dumfries and Galloway produce a wide range of luxury pates, and with flavours ranging from course and meaty duck, to light, traditional salmon, to fresh and herby roasted mushroom, they’ve got something for every palate.

Castle MacLellan uses the finest Scottish ingredients in its products, and works with a number of local suppliers, including Rannoch Smokery and The Orkney Fisherman's Society. These pâtés are decadent and luxurious and can be enjoyed all year round; on French bread with a glass of cider as a light lunch in summer; on brioche with glass of Burgundy as a winter starter.

The pâtés are flawless on the flavour front, and the quality of the ingredients is clear. Texture wise they vary greatly; the Chicken Liver Pâté and Rannoch Smoked Duck Pâté are both robust and buttery in texture, whilst the Oven Roasted Mushroom Pâté, Scottish Smoked Salmon Pâté, and Orkney Crab Terrines are mousse like, and could even be used as a dip rather than a spreadable pâté.

While all of the pâtés are delicious in their own right, they also all come with recipes ideas. The salmon pâté can be transformed into a smoked salmon and haddock chowder, the Luxury Orkney Crab Terrine into a risotto or a soufflé, the mushroom into a simple sauce, and the duck into spring rolls.
